
Get a pan hot.
Whilst that is heating, toss the cubes of bread in some olive oil. I used gluten free bread as that’s what we eat.
Toss in a hot pan until crispy - sprinkle with garlic salt if you wish.
Leave the croutons to cool.
Cut a chicken breast into cube and dry fry in a non stick pan.
Stir the bread crumbs, grated cheese and croutons together and arrange on a plate.
Place the chicken pieces on top and pretend that you’ve gone out for some great pub grub at the end of the week at a fraction of the price. After eating fatless, grilled and plain salad all week long this felt like a blow out. I’m going to be spending the evening sewing and making blocks for my new quilt. I’ll share that along the way.
It’s the beginning of the Easter holiday here and I’m home for two weeks (staycation - not going anywhere!) and I’m going to have fun, not spending any money but enjoying my time off and being creative. In case anyone looks out for me at the Quilting show in Exeter, I’m not going this year and will save my money instead. Sorry for the poor photos as I had to use my phone as my camera battery needs charging. Normal service will return shortly.
