Instead of chips/fries I peeled and cubed half a butternut squash and sprayed it with fry light and baked them on the highest setting in my mini oven. Make these first as they take longer to cook than the burgers.
I made the dressing from 100g of Greek style yoghurt, 1 teaspoon of dried or finely chopped fresh mint, a quarter of a finely chopped cucumber and a sprinkle of cumin. Dearly Beloved likes extra salad dressing on his, whilst I have slightly less. I make my dressing from 2 tablespoons of olive oil, half a tablespoon of cider vinegar and half a teaspoon of mild mustard. I shake it up in a jam jar with the lid on. (The entire supper comes to 9 WW/PP and £1.45 per head - salad is expensive!)

Looks lovely. We always make our own burgers too. I love turkey mince, it always seems to soak up flavours so well. Mr Twigs does a mean turkey mince chilli, even Twiglet loves it.
Salad is expensive isn't it, and the price of spuds in Aldi today was barmy !!

My method with butternut squash is to cut it in half lengthwise (you may need a chainsaw for this!), scoop out the seeds and roast it. Once cooked it cuts like butter and you can eat the skin too.

This will be an unpalatable thing to consider, but here in the US we see reports of test samplings of ground turkey from many facilities throughout the country. In half of the samples tested, fecal matter contaminant was found to be present, in varying degrees. It has quite put me off purchasing it. Processing may be different in the UK, but we are steering clear at the moment.

These burgers look great! Ground turkey also makes a great meatloaf and to keep the calories down you can add all sorts of chopped veggies. I like onion, zucchini, bell pepper and thing like that added.

I just form my patties into balls first and then squish them down with the egg flip. I've never thought of using the ring before.

If the squash is relatively fresh I hold it in my hand and peel it with a vegetable peeler (can get a little slippery as you progress) to get all the peel off. Then chop it in half lengthways or sideways. I then use a sturdy spoon to scoop out the seeds. After that, it is quite easy to chop. If I only want to use half, I'll wrapped the spare un-chopped bit in cling film and store in the fridge for no longer than 2-3 days.

I always make my own burgers too, and then I know exactly what is in them 🙂 I like making them out of pork mince and adding a sprinkle of Cajun spice - very tasty!
