My favourite meal and Radio Cornwall


Hello Dear Reader,

Actually, my favourite meal is a full cooked breakfast, including bacon, sausage, black pudding............oh I could go on...........in fact, my favourite breakfast is the full monty. As I now watch my diet, that's not an option. Now, I use bacon as an occasional but delicious addition. 

Here's my take on an alternative to the full English breakfast and egg and bacon salad instead.

Here's what you will need:

3 rashers of bacon per person - cut into lardons and fried until crispy
1 soft poached egg - needs to be runny.
1 little gem lettuce
half a peeled and chopped cucumber
2 large tomatoes - chopped.

Dressing

3 parts Olive oil
1 part Balsamic vinegar
1 teaspoon of runny honey
1 teaspoon of Soy sauce
1 teaspoon of Dijon mustard

Place all of the ingredients of the salad dressing in a jam jar and shake well.

Mix the salad and dressing and arrange on a plate.

Scatter fried bacon on top.

Balance a soft boiled egg on top.




We had this for lunch today and I hope it becomes your favourite meal too!

  1. My favourite meal is whatever I am eating today, I have not stopped eating any food but I have cut back on quantity. I also like to have a lean day if we are planning on a calorie laden dinner. I still use butter but about 1/4 as much, we have always eaten lots of veg and fruit and now I grow most of it.

  2. Favourite meal was Cumberland sausage, black pudding (both by a local butcher), fried egg (large, fee range) and potatoes mashed with butter.

    Since developing diabetes, I need to keep watch on my diet, so sadly this isn't a meal I can enjoy any more, too much fat. And the black pudding is no longer available as made by our butchers, due to some EEC nonsense.

    Current favourite is fish & chips, again a lot of fat but limited to about once a month.

  3. My favourite meal is anything my OH cooks for me. Doesn't a meal taste great when someone else has done the cooking?

    Until the debt is cleared, we are living on whatever is on offer or yellow sticker. Can't wait until we're out of debt and can occasionally eat what we fancy rather than what's on offer. We've cut back on meat and fish a lot as they're so expensive.

    I love the full monty breakfast too but your meal looks gorgeous Froogs!

  4. Looks lovely! There is plenty that I no longer eat as I can't afford it so if I can as it's on sale/marked down, it is a very rare treat. Items that immediately come to mind:
    -fillet of beef
    -steak
    -pork tenderloin
    -fresh fish such as Haddock, Cod, Salmon
    -canned red salmon ($7/can!)
    -cold cuts
    and so on.

  5. Made one of our favourite meals tonight. Seafood lasagna and Caesar salad. We probably only have it 3 times a year as it is very rich. Something that we don't do any more is deep fry anything. Got rid of the deep fryer about 5 years ago and don't miss it at all.

  7. My favourite meal was Chicken Tikka Masala, but now as I don't eat chicken, I just have a veggie version instead.

    Your breakfast/lunch looks delicious, and I would eat it anytime but simply without the bacon.

    Cumbrian - it's much more important to cut out carbs than fat if you are a diabetic!!

  8. It's not a meal, but I do miss proper butter slathered on white bread. Butter I don't buy because of the cost (cheapy marg all the way these days), white bread I don't eat because it's refined and I know it's no good for me. Oh but they do taste lovely jubbley. vx

  9. That looks delicious and right up my street. I will try it this weekend.

    Like many others, I have cut right back on meat - not a problem for me as I prefer veggie foods anyway, but my daughters moan a bit and feel deprived. Bacon is great for making them feel they are getting a meaty fix without breaking the bank. We particulary enjoy a baked spud with bacon and cheese, or pasta with leeks and bacon. Takeouts are also a thing of the past, but home made food is cheaper and much healthier anyway.
