Spinach and Pesto Chicken


Hello Dear Reader,

This is the last of the baked potato recipes that I was sent to try and this really is my favourite. I love spinach, chicken and the combination of a heaped tablespoon of pesto with a cheesy topping is just heavenly! As Guy Fawkes' Night approaches baked potatoes are just the perfect winter warmer.

Serves two - For this recipe, you will need:

Baked Potato per person
2 chicken breasts cut into chunks
Bag of spinach leaves
2 tablespoons of pesto
80g of grated mature cheddar.


1. Cook the baked potatoes as instructed.
2. Heat up the grill.
3. Saute the chicken in a teaspoon of olive oil until lightly browned.
4. Add the washed spinach to the pan and reduce the heat and allow the spinach to wilt for a few seconds.
5. Stir through two tablespoons of pesto
6. Place the baked potatoes on the grill pan.
7. Spoon the chicken, pesto and spinach into the baked potatoes, sprinkle with 40g of cheese on each potato.
8. Place under a hot grill until the cheese has melted.
9. Serve with a side salad or steamed vegetables.


Again, I used 2 Mc Cain's ready baked potatoes and can thoroughly recommend these recipes. You could use leftover chicken from a Sunday lunch, you could add broccoli instead of spinach or any dark green vegetable. Of all the recipes I have tried this week, this is my favourite. All of the recipes even fitted well into my Weight Watchers point allowance and each evening meal has been very filling and extremely tasty.

  1. I like your baked potato series...I would definately eat the chicken one regularly. The seafood ones look nice, but not a seafood & creamy sauce fan - I don't even like lobster Newburgh - just lemon & butter on my oceanic foods please...
    We do sloppy joes or chili on baked potatoes though..usually leftovers - using them up!

  2. Loved the baked potato series's. Great GF alternative to bread. Have you tried yams/sweet potatoes as a base? I use them and canned whole tomatoes in my Colombian beef stew- a nice switcheroo on the usual beef stew.

    1. Would love the recipe for your Colombian stew. Are you Colombian? I have visited Colombia 3 times and my children, both now in their 30s, were adopted there as infants.

  3. Tried the baked potato with sweet chili sauce along with a salad for tonight's supper. It was delicious. Will definitely have this again. I am definitely trying the chicken with pesto/salad and potato. It is my kind of meal. Thanks for the recipe. carla

  4. That does look good, but again, we would only use the one chicken breast between the two of us unless they were very small, then it would be two.

  6. This looks really yummy! I'm going to give it a go but I'm not sure that I would ever use bought pre baked potatoes - surely that has to be more costly than buying a bag of spuds?

  8. Hi Playing at Home - they are 50p each. There is just the two of us and I would never buy a bag of spuds, just too much for the pair of us - they would go off before we would eat them. If I eat potatoes - I usually never eat more than 100g of carbs in a meal
