I thought I would share a wonderfully retro recipe with you - Pineapple upside down cake! This is the sort of cake my mum would make for special occasions. It can be eaten warm with custard or cold as cake. We’ll do both. We’ll have some with custard as pud with Sunday lunch and the rest will be take to work in the lunch boxes.
As usual, I have a roast dinner cooking (chicken today) and I’ll plate up four meals, two of which we’ll eat when we get in from work tomorrow evening. I’ll also pick the chicken for us to have Coronation chicken sandwiches (chicken, mayo and a smidge of curry paste and tiny amount of mango chutney). I had to use up the rest of the oven whilst that was cooking. So here’s what I made. I put half the contents of a tin of pineapple in the bottom of a lined baking dish, added a few Approved food, sold for pennies, glace cherries. I then mixed up a sponge mix. Into a bowl I added, 6oz marg, 6oz sugar, three eggs and 6oz of SR flour. I whizzed the lot together with a hand held mixed and poured over the top of cherries and pineapple. The rest of the pineapple was popped on top and I poked it into the mix with a spoon handle. It went in the over for about an hour. I keep checking.
I had the juice left over and wondered what I could do with it. I made a fruit cake. 5oz marg, 5oz sugar, 10oz SR flour, and two eggs (slightly less due to the pineapple juice) - which I mixed together. I had previously soaked the fruit and another pack of glace cherries (they really are that cheap) and I chopped the glace cherries into quarters, in the fruit juice. I also had a few left over walnut pieces, which I also chopped to be smaller. The whole lot was mixed together.
I found the mixture was a bit wet, so I mixed in more SR flour, until I was happy with the consistency. The whole lot went into the over, the fruit cakes will take about an hour, I’ll then test them and see if they need longer.

Here’s the finished retro cake - Pineapple upside down cake. So easy to make and it keeps for ages if wrapped in foil or kept in a cake tin. Sunday lunch deserves a pud and Sunday teatime deserves a nice cup of tea and a bit of cake.

I’m also in the middle of making a quilt for the spare bedroom and part of the process involves cutting triangles off the points of the stars. I’ve made pin wheels with these, sashed them (get me………..all quilty talk now) and added a border. I have a crib size quilt topping, or a lap quilt. I’m going to keep adding to it and make a throw or just another quilt but I have no idea who for just as yet. Here’s the photo’s of the progress.

I make Stephanie Alexander's recipe all the time for this- the base is 175g butter, 150g sugar, 180 sr flour, 1 tbsp almond meal, 3 eggs and vanilla. Froogs I love your blog but I cannot support margarine (The Devil's Work) ! I am a butter girl!

YUM!!! I love pineapple but unfortunately my DH doesn't so I don't make anything with pineapple 😦 We had some pineapple left from our Easter ham and I think I'm going to make myself a small pineapple upside down cake 🙂 I've been thinking about it for days….Yuuumm!

I really must get some of those paper cases Froogs - your cakes always look so professional. I tried your lemon drizzle last week and OMG was it a hit in our house! Pineapple upside down cake is a real reminder of school cookery lessons and it's a fab idea to put in in a loaf tin. Thanks for sharing - love your recipes!

I like to make cornflake tart, with leftover pastry, a layer of jam and cornflkes. Lovely with custard just like at school ..mmm!

I am not really a 'baker' though I have moments where I get the urge to 'make' something. Recently I made a loaf cake with half a jar of left over lemon curd which turned out OK but perhaps could have done with some lemon juice as well for a bit of extra zing.

Hi - You can get the cake tin liners in Poundland or the 99p store. Trago 100 for £3.50 are the cheapest that I can find.

I love pineapple upside down cake. My grandmama taught me to make it years ago. I bake it in a cast iron frying pan. We put brown sugar, a bit of butter, and pineapple rings in the bottom. Then one cherry goes in each ring of pineapple. From there the rest is the same as what you did.
This weekend we made dump cake. A can of pineapple tidbits, a can of pie filling (I used cherry, but it is good with blueberry, too.), a cake mix (bought at huge sale) and a stick of butter. tossed on a few nuts and bake for about an hour. (Makes a 9×13 inch pan full.) I try to keep a cake mix hidden in the pantry for when we have unexpected guests so I can pull this together quickly. (In fact this weekend while I baked the macaroni cheese for an informal get together I baked the cake right next to it.)

I love pineapple upside down cake, haven't made it for ages and and hadn't thought about making it in a loaf tin - as usual I now feel inspired! Good job my Approved Foods order is due tomorrow with pineapple pieces included!

Pineapple upside-down cake—Yum! I haven't had one in so long I had forgotten how much I love them. I make a variation called a “dump cake”. Dump in casserole dish: Two cans crushed pineapple with juice, one or two cans cherry pie filling, cover with one box of cake mix, melt butter and cover top of cake mix completely. And bake at 350 for an hour, maybe. Delish!

Love the pattern and colours on the quilt.
I made another 2 quilts today for dog beds out of fleece fabric (for the wadding) and an old, tired quilt cover. It's very satisfying and addictive once you get started.

What a memory from my childhood - mum made a pineapple upside down cake just about every week. This inspired me to make one for myself and it's delicious. Just like how mum used to make it, although she used a regular square cake tin - I used a loaf tin like you did. Thanks for the inspiration!
