Chicken and Chickpea Tagine with Quinoa



Hello Dear Reader,

Quinoa is my new favourite food. Its low in fat and calories, high in iron, fibre, calcium and protein. I'm bored of rice and can't eat cous cous any more so
I've taken to Quinoa. It has a nutty flavour and can often be found on our menu.

To make this you will need:

2 diced chicken breasts,
1 finely diced onion
2 garlic cloves - crushed
1 teaspoon cinnamon
1 teaspoon cumin
1/2 teaspoon of chilli
1/2 pint of chicken stock
1 tin of chopped tomatoes
1 drained tin of chickpeas
2oz chopped dried apricots
1 teaspoon of dried mint - I had no fresh
Squirt of runny honey


1. Fry the chicken and onions
2. Add all the other ingredients
Simmer for 30 minutes.
3. Cook the quinoa as described on the pack.

Serve with salad.....or veggies and a massive smile. This serves five. I will have some for lunch and we'll eat the same again for supper tomorrow.

  1. Yes web love quinoa for all the same reasons. I cook it with some garlic and lemon juice - a little oil, garlic & lemon in the pan first, then add quinoa and toast it just a bit, then add the water to boil. Once cooked, let it cook then add to a salad with cucumber, cherry tomatoes, baby spinach, feta, capsicum and a little bit of chargrilled eggplant. And you're done, with a great salad for lunch. If really hungry serve with some meat on top or stir half a tin of rinsed lentils through. So good.

  2. I love quinoa too, I've seen quite a few sweet recipes using quinoa but haven't tried any yet. Asda do free from cous cous, which is quite good but at £2 for 375 g it's quite expensive!

    Love the look of this recipe and it's something I'd like to try.

  3. I've never tried quinoa (is it pronounced keenow?). Someone was telling me about it the other day and said it was delicious. We've switched from white rice to brown rice recently as white rice is not agreeing with me at all.

  4. I was in Melbourne yesterday and visited my daughter's new workplace (she is in hospitality) called "Wide Open Road" (in Brunswick). For breakfast I ordered a quinoa option as I very much like quinoa. It was a cauliflower, ricotta and quinoa fritters served with a salady mix of asparagus, mint, rocket and other greens. With 2 poached eggs. And smoked trout on the side. Amazing tastes and combinations, I loved it. Probably not frugal as I paid $21 AUS for it, but a real treat to enjoy with my daughter and "away from home". My daughter is gluten intolerant by the way.

  5. We are quinoa fans too, and now my husband has gone gluten free we are eating it more often. I sometimes make a quinoa porridge for breakfast, which involves bringing quinoa and milk to the boil, and then simmering until cooked, about 20 minutes or so. Add cinnamon, and a bit of sugar to taste. You can eat plain, or add stewed fruit and yogurt to this - delicious.

  6. I have quinoa kicking around the kitchen cupboard so I may just try this. I also have a number of rice and grain blends to use too. Thanks for kick starting the reminder.

  7. Quinoa is something I have never tried. It sounds nice though. As always I love reading about your meais. They are always so healthy and the photos make them look delicious. The crumble you recently cooked looked heavenly! X

  8. I love quinoa too. It does make nice porridge, I use it instead of rice for a risotto type thing, great for empty-the-veg-drawer meals.

  9. Oh man. I LOVE quinoa..it saves me. I put some water, quinoa and red lentils in a pot wen I wake up in the morning, when it comes to a boil I turn the stove off and cover. Take my shower, get dressed and drain my now cooked quinoa, set aside. I make breakfast for the both of us, then prepare my backpack with a thermos of tisane and some fruit, nuts, what I have, eat breakfast and then go back to my quinoa. cut up a carrot or some other raw veggies (radishes,fennel..) and a little cheese if I have some, pour some vinaigrette on top that I usually have ready in the fridge or else just pour the ingredients in my lunch box, stick quinoa and veggies in there, mix with a fork.
    It doesn't need reheating in the microwave, is delicious and_best thing_ light to digest. Pasta salad makes me tired after lunch..not quinoa.
    Also I really like it for a quick dinner wen I'm really tired, I just cook it, and serve with sardines in olive oil. It's so good, so little effort, so healthy!

  10. I've always wanted to start eating Quinoa but I just don't have a clue what to do with it or what to put it with. I'm going to try this recpie as my first attempt :-)
