Warm Quinoa Salad with grilled halloumi and roasted red peppers.



Hello Dear Reader,

I am rocking the quinoa! This is going to be a regular in my shopping basket. I also love halloumi and usually just have it in the summer, usually at a barbeque. I thought I would inject some sunshine into my dining room and this recipe is really tasty so that you forget you're only eating a small amount of food. I also believe that if I've forsaken eating out in the name of thrift then what I eat at home needs to be of a really good quality, tasty and good for me.

You will need - served three

250g halloumi £1.56 - Tesco (3 for 2 on cheese currently)
2 sweet pointed red pepper - Aldi - £1.25 (you can buy this ready roasted in a jar)
1 small onion - finely chopped - 3p - Aldi
200g quinoa - £2 - Waitrose (I've now sourced some ethical fair trade quinoa in Holland and Barrett)
500ml of vegetable stock - I use a cube and boiling water.
zest and juice of one lemon - 10p - Aldi
3 tablespoons of olive oil - 14p Aldi
Salad - £1.20
Total - £6.28 - £2.09 each. Expensive, but cheaper than three meals in a restaurant with this as the main course. Rich in iron and calcium and nutrient dense so I think it's well worth it.It's also gluten free and won't send my digestive system in a whirl.

1. Heat the oven to the hottest setting - you want to sear your red peppers
2. Prepare peppers and toss in a tablespoon of oil and place on scorching hot baking tray or dish
3. Roast until soft - place to one side.
4. Heat the pan with oil and fry onions until soft.
5. Add the quinoa and cook for a further three minutes.
6. Cook for 15 minutes with the pan covered and just simmer gently.
7. Heat the grill pan until smoking.
8. Slice the halloumi as desired and place in the pan until charred and then turn over and char the other side.
9. Zest the lemon and stir lemon zest, lemon juice and roasted red peppers through the quinoa

Arrange on a plate with crunchy salad (I used up the balsamic dressing I made). Serve the quinoa alongside with the grilled halloumi on top. Stand back and accept the adoration of people who love to be well fed.

  1. I love haloumi. I know some use it to replace bacon. Personally I find many dressed salads too wet. I guess my favourite salad would a Caesar salad and celeriac rumolade .(I apologise for the poor spelling).

  3. I have two favourite cheeses -
    1. A good strong cheddar is a staple in our fridge. My favourite recipe for cheddar is Cheese and Lentil Bake.
    Cheese and Lentil Bake
    Saute in a tbs oil, a large grated carrot, a chopped onion, a stick of chopped celery and/or a grated courgette, a red pepper if you I have one. Add the veg to - 4 oz of cooked lentils 3 oz grated cheddar, 2 oz porridge oats, a tsp mixed herbs, salt and pepper to taste. Mix all together with an egg and bake in a large greased loaf tin with a couple more ounces of grated cheese on top. Cook at 180 for 35mins (if you like you can add chilli or paprika)
    2. Brie!!
    Brie parcels
    Place a tablespoon chutney or pickle on a tranche of brie, wrap in filo pastry and bake in a hot oven for 10mins

  4. I had to look up halloumi and found it is a grillable cheese. It sounds wonderful. Will have to check our local cheese shop to see if they have it or something similiar here in the US.

    We had a lovely bean and turkey chili with some sourdough bread on the side for dinner. Lots of leftovers.

    looks yummy
    I love halloumi this way - grilled then a squeeze of lemon, a drizzle of honey and a light sprinkling of poppy seeds. This is great as an appetizer and is also very nice served with steak or chicken breasts.

  8. Not tried Halloumi, will put it on my list of 'to try'.
    Froogs, was it you that asked if anyone had some bright yellow tapestry wool a good while back? If so and you still need it, I've found some Anchor tapestry wool, number on the skein -8092 and can post it to you if you'd like it?

    Approved Foods have lots of quinoa on there at the mo if you haven't already spotted it.
    I prefer it to cous cous and rice.
