Better than beans
Hello Dear Reader,
I'm so busy I'm really going to catch myself coming back the other way at this rate. I love every minute of being busy and can't bear to be bored so this suits me just fine. Tonight was my monthly trip to the hairdressers (all in the budget), getting the laundry washed, dried, ironed and put away, getting the bed changed and getting ready for a cookery workshop tomorrow. We needed to be fed really quickly.
Tonight, the potatoes went into the micro wave.
Better than beans.......I had that cookbook years ago, does anyone else remember it?
6 meatballs, or some left over cooked meat,
3 rashers of streaky bacon
1 finely chopped onion
tbsp paprika
tbsp soft brown sugar
I set my slow cooker to high and plonked a tin of beans in there.
Fry the onions, meat balls and bacon until nicely caramelised,
Add some paprika and a sprinkle on a tablespoon of soft brown sugar.
Add all of that to the slow cooker along with the beans and go to the hair dressers for two hours!
Come home, zap a couple of spuds and then serve with the sticky meat and beans.
It's what I had in the house and not a sign of a takeaway in sight.
Cheap, quick and just what I need before I finish getting ready for tomorrow.

Me! I'm in full time education (26 hours in the lecture theatre/labs plus studying at home) and work 20 hour weeks on top of running the house. Like you, Froogs, I love being busy, but I equally love my commutes which enforce some chilling out - usually spent browsing blogs like yours!
ReplyDelete...funnily enough I've planned beans on a baked spud for tomorrow but we don't keep meat in the house so I'm going to jazz them up with some onions, smoked paprika and perhaps fresh herbs!

ReplyDeleteI want to just start throwing things from pantry and freezer/fridge that sound like they would make a good combination, cross fingers, turn on crock pot and go.
ReplyDeleteI did. My first semester and university finished yesterday and I messed up my timings a little. All is done and I now have two weeks to recover etc. I will start again with a squeezed in semester.

ReplyDeleteWow! that looks absolutely delicious! Can you clarify the size of the tin of baked beans? I am guessing a medium sized, 15-16 oz tin of pork beans in tomato sauce. Also, do you crumble the cooked bacon before adding it to the Crock pot? thanks

ReplyDeleteBoy I hate to be negative or bring anyone down, but now that I am retired I am just as busy, if not more, than I was when I worked! Of course now it is the stuff I want to do (makes a huge difference in my attitude!) but still not enough hours - hoping it keeps us young! :) I am always impressed at your creativeness with combinations, I just don't think of things like that. Sounds yummy!
ReplyDeleteOur favorite topping for baked spuds is sour cream or philly cheese, topped with fried chopped onions and bacon , topped with just a little grated cheese, then zapped 30 seconds to start it all melting. sometimes I add a little tomato relish as well. (Beans aren't as popular in Oz as in UK)
