Slimming World Friendly Egg Fried Rice

                   

Hello Dear Reader,

Lovely to hear from you all and your amazing stories about your thrifty choices. I wish I could have had the mindset I have now when I was younger, it would have, saved me the hassle I had of getting debt free. 

I also wished that I'd not put the weight on that I'd lost before....twice! 

I'm sticking to the healthy eating plan and to be honest, it's easy to follow. Supper tonight was egg fried rice. Serves 2.

1/2 cup of rice - cooked, will yield 200g of cooked rice.

1 bunch of spring onions 

1 yellow pepper - chopped

6 mushrooms - chopped

80g of chopped ham.

1 beaten egg.

Ginger, chilli and garlic - quarter of a tsp of each. I used the jarred variety.


Heat a pan, add the pepper, mushrooms and onions , spray with fry light.

Cook for ten minutes.

Add the rice, ginger, chilli and garlic.

Add the beaten egg and cook for a further minute.


                                  

Sprinkle with soy sauce. I use gluten free and only 330 calories all free foods on the Slimming World plan. I'm sticking well to 1240 healthy calories a day and I'm certainly not hungry.

  1. You are the second person to tell me about Slimming World and how effective it is without being hungry. I think I may need to look it up myself one of these days. My husband thinks that fried rice is ambrosia, and would eat it often. Great idea! I do stir fries fairly often, especially in summer when there are bits and pieces of so many fresh veggies available. I'll have to try and think of it more often. Thanks for the reminder.

  3. You may already know of the recipe but my husband and I make fried rice using "califlower rice" instead of white rice, it's part of our low carb diet (need to watch our sugars) but may also be good for those trying to watch their calories too.
