Vegetable Chilli - 70p per portion


Hello Dear Reader,

I was recently sent a voucher by Sainsbury's and asked to try their value range. Here's another recipe where I have used their products.

My recipe for vegetable chilli changes according to the vegetables I have in the fridge.

I used

1 finely chopped leek - 80p
1 finely chopped onion - basics - 5p
3 finely cloves of garlic - 5p - basics
2 tins of peeled tomatoes - 70p - basics
1 chopped courgette - 60p - basics
4 peeled and finely diced carrots - 36p - basics
2 veggie stock cubes - 5p - basics
150g of rice- 6p - basics
100g of red lentils - 22p
200g of plain yoghurt (strained to thicken) 18p - basics
paprika, chilli powder and cumin to taste - from my store cupboard
2 tablespoons of olive oil - from my store cupboard.
a sprinkle of lemon juice - again from my store.

Total cost - £2.78- serves 4 people - 70p per portion.


To make this


  • Heat the oil in pan
  • Add leek, onion, garlic, courgette and carrots
  • Saute until the leeks have softened.
  • Add the tinned tomatoes and lentils
  • Crumble in the stock cubes
  • Add 2 tablespoons of chilli, 1 tablespoon of cumin
  • Keep stirring and add water if required.
  • Simmer for 30 minutes
  • Cook the rice as required.
  • To thicken a basic yoghurt -place a coffee filter in a sieve and pour in the yoghurt. Stand over a bowl to drain and this gives the yoghurt the 'Greek' yoghurt texture.
  • Serve with yoghurt and sprinkle of paprika.




This is delicious and even though I was effectively given the ingredients, my opinions are entirely my own. I have the option of many supermarkets, farmer's markets and budget supermarkets. However, if Sainsbury's is your nearest or simply your supermarket of choice then I can't find fault with their budget range. 

Quite simply, there is nothing to beat a good veggie chilli on a cold Saturday night. My heart goes out to everyone on the North Cornish Coast as another storm surge and really high tide is about to hit at 7pm this evening.   1. Hope everyone is ok in north cornwall tonight , i yearn for living in such a beautiful place but feel safe in the midlands away from the extreme weather tonight ,i have used some of sainsbury's basics in my cooking this week and am extremely happy with them xxx

  5. Do I spy kidney beans in the picture, but not listed in the ingredients?
    I slather plain yogurt onto everything! But never thought of straining it to thicken it. How do you do it please? Just in a sieve, or muslin too? x

  6. Yummmmm! I'm always looking for recipes where I can hide things to ensure SO gets his vegie requirements. He's difficult. His mum is Dutch and had this thing for boiling everything until it was grey, pouring the water off it and then drowning it in butter (revolting). Although he hates vegies cooked that way, he also doesn't like my "heating" them up and serving them - his words for anything you can still chew! It's tough. We've been married for 32 years and you would think he would have got over it by now. :) I'm hoping as he realises that healthy food isn't cooked to death - and vegies are integral to healthy eating - will keep him going a lot longer than the type of diet he would feed himself.

  7. This looks great Froogs! I will add this to my menu plan for this week. You know, at one time I had a collection of over 200 cookbooks, but I decluttered and gave most of them away. You taste in food runs close to mine so I find myself using your recipes more and more, You are now my go - to for dinner inspiration! Plus the price is right! As always, thank you for all that you do!
