Mushroom Risotto and Spicy Pork with roasted butternut squash andsteamed beans

Hello Dear Reader,
Normally my risottos start with olive oil and end up with lashings of Parmesan so making a low calorie Slimming World friendly one is quite a challenge. Here’s my 1.5 syn version and only 388 calories. Apologies for the pics but I’m snapping them and blogging on an iPad and the picture quality isn’t great.
60g (half a cup) of arborio rice
Stock made from a cube and two mugs of boiling water
1 courgette - chopped
1 small onion - chopped
4 mushrooms chopped
Sprinkle of garlic granules
2 laughing cow light blue cheese triangles.
Fry light spray
Heat a pan, add the courgette, onion and mushroom, spray fry light and cook through
Add the rice and one mug of stock with a sprinkle of garlic granules
Keep stirring until the stock has absorbed
Keep adding some of the next mug of stock until absorbed by the rice and the rice is soft.
When you are happy with the consistency of the rice, stir through the cheese triangles until melted.
It’s really creamy and cheesy without the calories. I made it last night, took it for lunch today and heated it up.
Supper last night was spicy pork with roasted butternut squash and steamed green beans. To make this I used:
1 1/2 pork steaks each with the fat cut off.
1 pack of passata with chilli and herbs - 40p in Asda
One chopped onion
One chopped pepper
Place the pork steak in a casserole dish,
Add the vegetables
Cover with the passata and mix,
Cover with foil and cook at 180 for 40 mins to an hour.
After thirty minutes places the butternut squash cubes on a tray and spray with fry light and cook for twenty minutes, or maybe longer. ( my oven is dodgy and not reliable).
In the last fifteen minutes, steam the beans, I used frozen…..they’re fine. The whole lot, syn free
Talking of food, I must update my recipes and trawl through all those I’ve not listed and when I get round to it and when I do, I’ll put together a Slimming World list too.
I hope you enjoy my ‘lighter’ recipes, mind you, I could do with a fry up but I’ll have to refrain!
