I thought I’d give another shout out for frozen fish. I buy it as I always have it in when I need it, it’s half the price and it’s easy to handle without the smell of fish. The major supermarkets:Asda, Tesco and Morrisons have all signed up to only selling responsibly sourced fish, that hasn’t come from areas of under stock or over fishing and you can check out the sourcing policy of wherever you shop, usually by checking through their websites.
Onto the fishy parcels.
I used a cod portion and seven queen sized scallops each, I then used the zest of a lime, a sprinkle of chilli flakes, a chopped tablespoon of ginger (I use mine out of a jar that I keep in the fridge) and the juice of one lime squeezed over the top. I then seasoned with salt and wrapped it up into a loose parcel where the lime juice couldn’t escape.
I the bottom of the steamer I placed the new potatoes and yes, I do eat the skin too, with the broccoli and beans. In the top of the steamer, I placed the fish parcels and steamed them all for twenty minutes. It’s a triple steamer with water in the bottom, then two steamer baskets above. It means I only have to use one gas burner and it all cooks quickly. You could use an electric steamer if you have one.
The fish should be only just cooked. I don’t like over cooked vegetables or fish. You could use lemon juice, zest and a teaspoon of butter instead but we really love ginger.
I poured the cooking liquor over the potatoes and veggies and it made the whole supper zesty and limey. I know some people prefer potatoes with their skins removed but I like the fiberous skins and they also contain lots of vitamin C.
Totally delicious, hardly any fat and if you’re following the Slimming World plan, then totally ‘free food’. A massive heap of food for a Friday night and just the thing to start the weekend off.
The weather is promising to be good this weekend which hopefully means plenty of walking and getting out and about. I shall get out in the garden, weather permitting and definitely put some miles on my walking boots.
